Vegan Raspberry Coconut Creamsicles Recipe

Prep Time: 10 min + chill time

Ingredients( Serves 12 )
2 cup fresh raspberries
1 cup coconut milk
2 tablespoon lemon zest
3 tablespoon agave nectar
1 whole lemon (juiced)

Directions
1.     In a blender, combine raspberries and coconut milk and blend until liquified.
2.     Add in lemon zest, lemon juice, and honey. Blend until well combined.
3.     Pour mixture into popsicle molds. Or, if you don't have any (like me), you can pour them into shot glasses or an ice cube tray for cute mini popsicles. Cover with plastic wrap and poke a popsicle stick through the wrap into each shot glass or ice cube mold.

4.     Place popsicles in freezer and allow to chill for 6 hours. Serve.
