3 ounce semi-sweet chocolate squares
1 cup heavy whipping cream (cold)
8 ounce cream cheese, softened
1/2 teaspoon vanilla extract
1 cup powdered sugar
1 cup fresh raspberries
Melt chocolate using a double-boiler (or a heatproof bowl over a saucepan of simmering water) until smooth. Remove from heat while you do the next steps.
Use a hand mixer to whip the heavy cream on high speed until it holds a stiff peak. Add the softened cream cheese and beat until combined. Add the melted chocolate and vanilla and, finally, add the powdered sugar until it all comes together.
Spoon the mixture into ramekins – larger for fewer, smaller for more. Top with raspberries and refrigerate until set (at least an hour).
